2 TBS butter1 egg2 TBS almond meal2 Tbs flaxseed meal(if no almond meal available, can use 4 TBS flaxseed)1/2 teas baking powder1 teas cinnamonSplenda (to taste - I use about 1 TBS)
Put butter in a coffee mug. Microwave 30 sec on High. When butter is melted, slosh it around to coat the mug so the muffin won't stick. Add the egg and beat with a fork. Then add the rest of the ingredients. Mix. Microwave on High for ONE MINUTE. Muffin will slide out of the cup!
