Vegan Zucchini Banana Walnut Bread

2 cups raw zucchini, shredded3/4 cup mashed banana1 cup sugar3 tbsp ground flax seed + 8 tbsp water (egg replacement)2 tbsp vegetable oil3 teaspoons vanilla3 cups flour1 teaspoon salt1 teaspoon baking powder3 teaspoons cinnamon1/3 cup chopped walnuts
Preheat oven to 325 degrees. Oil two 9" x 5" x 3" loaf pans or spray with cooking spray.
In a small bowl, whisk ground flax with water (or use your favorite egg replacer).
In a large bowl, combine flour, salt, baking powder and cinnamon.
Add flax mixture, zucchini, sugar, banana, oil, and vanilla. Mix until just combined. Fold in walnuts.
Pour half the mixture into each pan. Bake for about 1 hour, or until toothpick in center comes out clean.
Makes 24 servings.
