3 medium ripe tomatoes1 medium onion1/3 cup seasoned bread crumbs1/2 cup part-skim mozzarella cheese2-3 cloves garlic, mincedDried parsleyDried basilSaltPepperOlive Oil cooking spray
Mince garlic. Slice tomatoes and onions. Place tomatoes on paper towels to drain off some juice. Toss together tomatoes, onions, garlic, dried parsley, dried basil, salt, pepper, bread crumbs, and mozzarella in oven proof baking dish. Generously spray with cooking spray, and toss again. Bake in 350 degree oven for approximately 20 minutes. Makes 4 servings.
