Beth's Banana Chocolate Chip Muffins

Ingredients
1 cup banana, mashed (2 and 1/2 Med bananas)1 Large egg1/2 Cup Applesauce1/2 Cup Splenda1 Cup of Wheat Flour1 Cup Regular Flour1/4 Cup 1% MilkVanilla2 Tsp Baking Powder3 Tbsp Semi-Sweet mini chocolate chips
Directions
Serves: 16 regular sized muffins

Mix all ingredients in large bowl (I also threw in some cinnamon and nutmeg and you may want to try adding some walsnuts) Fill muffin tins about half way, dough will be thick Bake 350 for 20 mins.

    Very yummy. Family liked them also. They do tend to stick paper muffin cups.After 2 days I had to throw away the left overs, because they were too hard. But I loved having them around for a quick snack and will make them again! - 8/24/10
