homemade 'nutrigrain' bars

Ingredients

2.5 cups flour1.75 cups sugar (I use half sugar, half substitute)2.5 tsp baking powder.5 tsp salt16 oz. strawberry preserves1-2 tsp water3/4 cup butter2 cups oats
Preheat oven to 375 degrees F
mix all dry ingredients
add melted butter (and some water if necessary) to make the mixture moist (not too wet, just until it will stick together)
Press half of the mixture into a 9x13 pan
in a separate bowl, mix the preserves and 1-2 tbsp water together
spread the preserve mixture into the baking pan
press the other half of the dry ingredients on top of the preserves. I actually do this in another 9x13 pan and then move the pressed mixture piece by piece on top of the preserves layer
Bake for 20 minutes, or until top is browned.
allow to cool before cutting into bars
