South West Omelet

Ingredients
scallions, cilantro (to taste for both)jar of salsa or picante sauce is my favorite1/2 can of black beansabout six eggs mixed with about a half a cup of milk to make lite and fluffy
Directions
chop scallions and cilantro and mix in a bowl with the cheese and beans and salsa
beat eggs with milk
pour eggs into non stick pan
when eggs begin to harden slightly, tilt pan and cook as you would an omlet, by letting the uncooked egg slid underneath, then place in bowl mixture
fold over and cook til cheese is melted
top with sour cream

should serve 2 people
