Porcupine Meatballs

Ingredients
1 beaten egg1 103/4 oz can condensed tomatoe soup1/4 cup long grain rice2 tablespoons finely chopped onion1 tablespoon snipped parsley1 pound extra lean ground beef1 teaspoon Worchestire sauce
Directions
In a bowl combine egg, and 1/4 cup of the soup. Stir ingredients rice, onion, parsley 1/2 teaspoon salt and 1/8 teaspoon of pepper. Add beef and mix well. Shape meat mixture into 20 small meatballs;place in a 10 inch skeillet. Mix remaining soup with Worcestershire sauce and 1/2 cup water;pour over meatballs. Cover and simmer 35 to 40 minutes; Stir often.

    Love it. I tweeked the recipe but the basic ingredients are the same. Left out the worcestershire sauce. Used one cup of med grain white rice. I definitely will make this again. - 8/4/10

    I make porcupine meatballs also and they are good. All i use is ground beef, rice and a bit of onion,garlic,celery and seasoning salt or powder and i put it in tomato juice. My kids love it. - 2/21/11

    My mom used to make these when I was a kid. We'd serve with mashed potatoes and corn. It was best when we'd mix everything on our plate together. Sounds weird, but it was one of our favorite meals! - 9/13/10
