Pina Colada Sorbet

Ingredients
2 cups fresh diced pineapple (or canned in juice, drained)2 cups unsweetened pineapple juice1 cup lite coconut milk1 teaspoon imitation rum extractJuice of one lime8 packets Truvia
Directions
Mix all ingredients together in blender and place in ice cream freezer. Freeze until semi-solid. Makes 10 servings.

    I'm not usually a sorbet person, but I really enjoyed this dessert! The flavor combinations were a very good balance between the pineapple and coconut, and the lime juice and hint of rum added a nice backdrop. The serving size was comparible to store brands.     I totally LOVE pineapple and coconut so that may have helped in my rating, but I thought this was really yummy! I had to let it sit out for about 5 minutes to let it thaw after freezing, but it was still smooth and tasty. I will try this one again! - 8/9/10
