Ingredients
1/2 cup cornmeal1/4 cup flour1/2 cup diced onions1 (16 oz) bag of frozen okra1 can (14.5 oz) diced tomatoes (drained)1 tbs of cooking oilsaltpepper
Directions
1. Mix cornmeal, flour, onions, okra, diced tomatoes, salt and pepper in a bowl.

2. Pour 1 tbs of oil in a nonstick skillet and let it get hot.

3. Pour okra mixture in skillet and cook until okra is done and brown.

    I'm looking forward to trying this very soon! I'm going to omit the salt because I use self rising cornmeal. I also suggest boiling frozen okra for 5 minutes and then draining and allowing it to cool completely before cooking it. It will stick to the pan and make a big mess otherwise! - 7/9/08
