Ingredients
1 3/4 c all purpose flour1 1/4 c sugar1 tbsp baking powder1/4 tsp salt1 tsp cinnamon1/2 tsp ground ginger1/2 tsp nutmeg1/4 tsp allspice1/8 tsp ground cloves1 c pure pumpkin1/2 c soymilk1/2 c applesauce or vegetable oil2 tbsp molasses
Directions
preheat oven to 400 degrees. Lightly grease muffin pan.
combine pumpkin, soymilk, oil or applesauce, and molasses. Add flour, sugar, baking powder, salt and spices.
Fill muffin cups to 2/3 full. Bake for 18-20 min until knife comes out clean.
