Naples Pasta Salad

1 lb. rainbow rotini or any pasta pieces, cooked and drained2 cups chopped ripe red tomatoes1/2 cup olive oil3 tbsp balsamic or red wine vinegar1/2 cup chopped onion6 tbsp chopped fresh basil (3-4 tbsp dried)4-6 cloves garlic, minced1/2 tsp oreganosalt and pepper to taste
makes 8 1-cup servings
Mix the dressing first: Combine tomatoes, olive oil, vinegar, onions, basil, garlic, oregano, salt and pepper, in a big non-metal bowl, and let stand 2-3 hours (or overnight) on the counter.
Cook the pasta according to package directions, drain, and combine with the dressing. Stir well and serve immediately.
You may want to add more vegetables or pieces of grilled chicken. This is a great picnic salad because it doesn't require refrigeration.
