Edmonds Chocolate Fudge

Ingredients
* Granulated Sugar, 2 cup (remove) * Cocoa, dry powder, unsweetened, 2 tbsp (remove) * Butter, salted, 25 grams (remove) * Milk, nonfat, 0.5 cup (remove)0.5 teaspoon vanilla essence
Directions
Mix Sugar and cocoa in a pot, add milk and butter. Mix over a low heat stirring until sugar and butter is melted, mixing all the time. Bring to the boil and boil without mixing until soft ball stage - this is when a drop is dropped into cold water and retains the ball until removed from water. Then add vanilla essence and stand for 5 minutes. Mix with a wooden spoon until thick. Spread into a 20cm tin - well greased and mark squares. Cut once cold.

    I've grown up with this recipe when we lived in NZ, and continue to make it. The problem is that it's so high in calories (all that sugar) so eat in very, very small moderation if you can. It's hard to not eat the whole pan. It's very sugary though, not like other fudges, but my favorite. - 1/1/14
