Apple Cinnamon Craisn Diet Cookie

Ingredients

2 1/2 cups bran buds cereal1 cup oats1/2 cup raw wheat bran1 cup powdered milk1/4 cup nonfat milk2 tbl. Butter ( I use coconut oil )2 eggs7 egg whites1 1/2 tsp baking powder1 tsp salt (I use sea salt) also optional1/2 cup sugar ( I use dark agave nectar)1 banana mashed1/2 cup applesauce1 apple shredded1 small lunch bag size box of crasins1/8 tsp nutmeg1tbl. cinnamon1 1/2 tbl. vanilla extract
Preheat oven 375
Combine all the dry ingredients, except sugar, butter and spices give them a good stir
Add to dry 1 small box of crasins & 1 finely shredded apple, give a good stir
Whip the the eggs, egg whites, banana, liquid milk, applesauce, sugar, vanilla & spices
Side Note: I melt 2 heaping tablespoons of coconut oil at this point to add later
Pour Egg mixture over the dry ingredients and give the dough a good stir.
Add the melted butter or oil of choice to the dough and mix well.
Let stand at least 5 min to allow the dry cereal to absorb the liquid.
If you think the dough is too runny after in minimum of 5 minutes sprinlke in more oats.
USE PARCHMENT PAPER TO LINE THE COOKIE SHEET
Place spoonfuls of dough on cookie sheet, use the spoon to flatten and form a cookie shape, the cookie spreads very little during baking
Place in 375 preheated oven
Bake for 12 min
Transfer to wire rack to cool
