Paleo Muffins

Ingredients
2 cups Almond Flour2 tsp Baking Soda1 Tb Cinnamon1 Tb Vanilla1 cup Raisins3 medium Bananas1/4 cup Coconut Oil3/4 cup Walnuts
Directions
Mix together and pour into muffin baking pan. Cook at 325 for 25 minutes. Let stand and serve! Makes 12 muffins.

    Be sure to cool before removing from pan or they will crumble! These are fabulous. DH loved them, too. I baked them in silicon muffin pans without liners, and there was plenty of fat to keep them from sticking. I actually might cut the oil just a smidgen next time. - 9/15/14

    I followed the other person's lead and added 2 eggs. They were great! Sometimes it's difficult to find paleo baked items that are really any good but these are great. Had a non-paleo friend say they were really good too! I will make again and again! - 6/12/14
