Ingredients
4.5 c. All purpose Flour2 c. spenda1 TBS Baking Powder1 TBS Baking Soda1 TBS Cinnamon1 tsp salt2 c unsweetened apple sauce6 eggs3.5 c. shredded zucchini (w/ peel)1 - 20 oz. can crushed pineapple (drained)3 Tsp vanilla extract
Directions
Pre-heat oven to 325 degrees, Line muffin tins.
In a large bowl combine first 6 ingrediets. Make a well in center and add remaining items. Mix until smooth.

Fill muffin tins 2/3 and then bake 20 -22 min.

Makes approx. 60 muffins
