Dadteu's Chicken Fried Steak

6 three ounce sirloin steaks, pounded thin2 large eggs, beaten1 1/2 cup wheat flour4 tbs canola oil4 tbs wheat flourdash of saltdash of pepperMilk, approximately 2 cups. Add more if necessary.
Pound out the steaks until they are about 1/8 - 1/4 inch think. Dredge steaks in flour, then in egg and finally in the flour mixture again. Let set for a few minutes. Add the oil to a heavy skillet. Heat to approximately 350 degrees or medium high heat. Put steaks in pan but do not crowd. Once the first side is golden brown, turn and finish the second side. If necessary, cook in batches, adding oil if necessary.
Drain off all excess oil except for 4 tablespoons. Heat to medium high and add flour, stirring to get rid of lumps. Once incorportated, add milk, stirring to mix. Add milk and continue stirring until about the consistency you want for your gravy. Continue cooking until gravy boils and is as thick as you desire. Keep stirring and bring up bits off the bottom of the pan.
Pour gravy over steak and potatoes on plates and serve with vegetables. Serves 4-6 people.
