Grain-Free Pancakes (3 pancakes)

Ingredients
3 eggs3 Tbsp butter or coconut oil, melted3 Tbsp coconut or whole milk1/2 tsp stevia1/4 tsp sea salt204 drops pure vanilla3 Tbsp coconut flour1/2 tsp baking powder
Directions
Using a wire whisk, mix together eggs, melted butter, milk, stevia, sea salt and vanilla. Continuing to whisk add the baking powder and coconut flour until thoroughly mixed. Heat 1 tbsp of butter or coconut oil in a skillet on a med. flame. Spoon 2-3 Tbsp of batter onto skillet making pancakes about 3-4 inches in diameter. sprinkle with blueberries if desired. flip when pancakes start ot form bubbles around the edges.

    These are very good pancakes, being Grain Free. They hold together nicely as well. I omitted the stevia and used a crepe pan, as I find grain free pancakes are thinner and spread more.
