Mother's Shrimp with Snow Peas

1 lb. large shrimp1/2 tsp. sugar1 tsp. soy sauce (gluten free)1 1/2 tsp. cornstarch, dissolved in 1 T. water3 T. olive oil1/2 tsp. salt1/3 c. chicken broth1/2 c. sliced water chestnuts1 1/2 c. snow peas (peapods)1 large purple onion, sliced2 small stalks celery, sliced1 c. fresh mushrooms, sliced1 c. almonds4 c. rice, cooked
Cook rice and keep warm till ready to serve. Wash and devein shrimp. Cut lengthwise. Mix sugar, soy sauce, cornstarch and water. Heat oil in large frying pan. Add salt, and shrimp. Cook until white. Add broth, snow peas, celery, onion, and water chestnuts. Cover and cook 1 1/2 minutes. Add soy sauce and serve over rice. Serve immediately with dinner. Enjoy!
