3-4 medium zucchini, shredded1/2 onion, diced1/2 cup Egg Beaters, or two eggs6 tablespoons grated parmesan cheese1 clove garlic, minced1/2 tsp saltCooking sprayButter spray
Grate the zucchini into a colander. Squeeze out the excess water, and let it sit for an hour or two. Squeeze again. Finely dice the onion and mince the garlic and add it to the zucchini mixture in a large bowl. Add the egg beaters, salt, and cheese. Mix well. Form small, thin patties. Spray your skillet with cooking spray and as much butter spray as you like and bring it to low heat. Place the patties on skillet. Cook for about 6-8 minutes, turning once. If you like, you can turn up the heat during the last minute or two of cooking to brown the outside. Serve with light sour cream or ketchup.
