Light and Tasty Thai-Style Chicken

Ingredients
1/4 cup reduced sodium soy sauce3 tbs lemon juice3 tbs minced fresh basil or 1 tbs dried basil3 cloves garlic, minced2 tbs fat free plain yogurt2 tsp lemon peel1 tsp ground ginger1/2 to 1 tsp crushed red pepper flakes4 boneless skinless chicken breast halves (4 oz. each)
Directions
In a bowl, combine first eight ingredients. Set aside 1/4 cup; cover and refrigerate. Pour the remaining marinade into a large resealable plastic bag; add chicken. Seal bad and turn to coat; refrigerate overnight.

Drain and discard marinade. Place chicken in a 13x9x2 baking dish coated with nonstick cooking spray. Spoon reserved marinade over chicken. Bake uncovered at 375 for 20 minutes or until a mead thermometer reads 170. Serves 4.
