Crock Pot Curried Lentils and Rice

1 cup rice1 tbsp curry powder3 1/2 cups vegetable broth1 cup lentils2 vegetarian bouillon cubes1/2 tsp garlic powder1/4 tsp pepper1 onion, diced
Combine all ingredients and cook on low 4-5 hours.
This makes a tasty but toned down version. Add more pepper, curry powder, and/or curry paste to give it more kick. Make sure to use vegan broth/cubes if you're going for vegan.
Makes 4 servings.

I am going to try this this weekend. I guess the high sodium come from the bouillon cubes? This sounds soooooo tastie - 8/13/10

I had this for dinner. You're right on the sodium- I usually use low sodium cubes and/or homemade broth, but they didn't have that in the nutrition tracker.
