Low Fat Beef Stew

Ingredients
2 1/2 pounds beef round, cut into 1 inch cubes1 cup carrots, peeled3 small potatoes, peeled and cut into 1 inch sections1 cup celery, cut into 1 inch sections1 cup onion, cut into 1 inch pieces1/2 bell pepper, cut into 1 inch pieces2 cubes beef bouillon1 cup waterCooking spray3 cloves fresh garlic, peeled and crushed (optional)
Directions
Cut beef round into one inch cubes (and garlic if desired) and brown in saucepan with cooking spray. Cut celery, onions, bell pepper and potatoes into 1" pieces. In pressure cooker, combine beef, vegetables, bouillon, spaghetti sauce, tomato, and water. Cover with pressure lid, bring to a boil, lower heat and set weight for 45 minutes. Remove from heat and set aside until cover can be safely removed. Stir and season, adding salt and pepper as desired. Makes 6 two-cup servings.
