Blueberry-Honey-Bran-Yogurt Muffins-1 muffin/serving

Ingredients
1C all purpose flour1t baking powder1t baking soda1/4t salt1/4C unsweetened orange juice1/2C honey2T canola oil1t vanilla extract1C plain fat free yogurt1 egg3C bran flakes cereal1C fresh or frozen blueberries
Directions
Combine the first 4 ingredients in a large bowl. Combine orange juice and next 5 ingredients. Add to dry ingredients, stirring just until moist. Gently fold in bran flakes and blueberries.

Spray or line muffin cups - divide batter among 12 cups.

Bake at 400 degrees for 18 minutes or until golden brown.

Makes 12 large muffins or 24 med/small muffins.
