1 tbsp olive oil2 tbsp finely chopped onion1 cup lentils, rinsed3 cups water1 can (10 ounces) diced tomatoes1/2 tsp minced garlic1 cup long-grain white rice1-1/2 tsp grated fresh ginger1 tbsp curry powder2 tbsp freshly squeezed lemon juice2 tbsp chopped fresh cilantro

Add tomatoes with juice to the pan.
Stir in the garlic, rice, ginger, and curry powder and cook covered 15 to 20 minutes or until lentils are softened but still somewhat firm, or done to your taste.
Add more water as needed so mixture doesn't dry out.
Remove from heat and stir in lemon juice, garnish with cilantro.

Just made a pot of this and loved it. I had to sub powders for garlic and ginger, omitted the onion, used brown rice, and it turned out delicious! Those who said it wasn't salty enough maybe need to cut back? I eat very little salt and this tasted great to me. Great high fibre side for meat dishes! - 7/1/09

I really loved this and love it's versatility. I tried the garam masala and loved it, but would try curry too. Will also try adding some cooked chicken to simmer in the spices and tomato. Looking forward to trying lots of variations. I also add spinach for an added boost! - 1/16/09

deeeelish.... reminded me a bit of Spanish rice, but healthier. I used fresh diced tomato which turned out really well. I will definitely make this one again! - 9/7/08

I come from India. And this is almost a staple diet for some of us. Love it. Thanks Paula for sharing. One option is to pressure cook the lentils - with a ratio of 1:1 Lentils 1 Water 1. You can try this with Kidney Beans as well - dont know how it will affec the calories though :-) - 3/27/08

THis was flavorless until I added some vegetabel bullion. Then it was OK; however; it improved with age. So I would make it again with a few adjustments to the recipe and would wait at least 24 hours before I ate it. - 3/9/08

Very good!! I used the spiced red pepper canned tomatoes for a little extra kick, also added some finely chopped turkey sausage for my meat eaters. Definitely adding this one to my meal plan. - 7/19/10

I would love to make this, but would prefer to use brown rice. I see several comments saying it needed more flavor,so I would add more seasonings..not salt. - 3/27/08

Yum! I used vegetable bullion when I was cooking my lentils, an didn't have canned tomatoes, but it was great anyway! I used brown jasmine rice instead of white rice. - 11/26/07

This is delicious. I added 1 tsp of garlic salt and only cooked for 15 minutes. Very satisfying! - 9/13/07

Where's the salt? This was tasteless. When I added quite a bit of salt to the finished product, it wasn't half bad. I'll probably make again adding a tsp of salt. (admittedly I used fresh tomatoes. Does that make a difference?) - 8/4/07

For accurate calorie count, it seems one must use 1 cup pre-COOKED rice, or much less uncooked rice. Made with 1 cup UNCOOKED rice, the calories/1 serving is about twice as much as listed. 1 cup uncooked rice=675 cal, so each serving would have 110 cal just from the rice, +more from the lentils, etc - 6/27/13

I used dried onion, garlic, ginger and cilantro. I also used brown rice instead of white. But I think it tastes really good - 7/17/12
