Chicken Salsa

Ingredients
.....1 lb skinless boneless chicken breast ---- cut into bite size pieces....2 tsp Taco Seasoning....Cooking Spray....2/3 cup bottles salsa....2/3 cup shredded reduced fat cheddar...1 (4oz) can whole green chilies, drained and thinly sliced....1/4 cup fat-free sour cream....2 TBS sliced black olives
Directions
preheat oven to 375

Combine chicken and seasoning, tossing to coat. Heat a large non-stick skillet coated with cooking spray, add chicken, cook 4 minutes or until browned.

Arrange chicken in an 8-in square dish coated with cooking spray. Top with salsa, cheese and chiles.

Bake for 8 minutes until chicken is done and cheese is melted. Top each serving with 1 TB fat-free sour cream and 1 1/2 tsp olives.

**Try using mango or peach salsa for a sweet flavor. Make cheese quesadilla for not dieters as a side. Also, try serving over brown rice...
