Thai Seafood Curry

Ingredients
1 Tablespoon Olive Oil1 Onion, Diced1 Cup Snow Peas sliced. I use Baby Green Beans1 Red Capsicum, Sliced600g Fish or Seafood Pieces ( Fish Prawns Squid etc)1 x 45g Packet McCormick Thai Seafood Curry Mix1 x 375ml Carnation Light Coconut Flavored Milk1?2 Cup Water
Directions
Heat oil in large pan and fry onion and capsicum for 3-4 minutes.

Add the fish or seafood to pan and stirfry for 2 minutes then add packet contents, coconut milk and water

Cook while stirring for 3-4 minutes then remove from heat and serve.

I serve it with brown rice or you can have noodles.
