Shrimp Thermidor

1 lb shrimp(deviened and shelled), 4T butter, 1/2 white onion (fine chop), splash white wine, 2 T flour, 1/2 c milk, 1/3 c white cheddar (grated), 1/2 t paprika, salt, pepper, 2 T parmesan, 2 T bread crumbs, optional 1 t red pepper flakes
makes 4 servings
*skillet on medium heat- melt 2 T butter and saute shrimp till firm and pink; remove from heat and set aside
*saucepan on medium heat- melt 2T butter; saute onion to tender (3-5min); whisk in flour (1min), whisk in wine (cook off alcohol); whisk in milk- reduce slightly
*remove saucepan from heat and whisk in cheddar, paprika, salt and pepper
*add lobster to sauce
*pour mixture into small casserole dish
*sprinkle top with parmesan and bread crumbs
*broil on high until top is golden (2-3min)
