2/3 c unbleached flour1/3 c w w flour2 T corn meal2 T wheat germ1 tsp baking powder1/2 tsp baking soda3 T brown sugar1 tsp cinnamon1/4 tsp salt1 1/4 c lowfat buttermilk (or sour milk)2 egg whites (try 1 egg)1 T oil or melted butter1 tsp vanilla
Combine flours, corn meal, wheat germ, baking powder, baking soda, brown sugar, cinnamon and salt. Make a well in the center. Whisk together buttermilk, egg whites, oil and vanilla. Pour milk mixture into flour mixture and stir to mix well.
Heat frying pan until hot (medium-high). Sppon out 1/3 c portions. Makes 12.
