Tomato Pepper Salad

Ingredients
1-1/2 yellow or orange tomato (medium size)1/8 medium red onion3/4 yellow bell pepper1 tbsp virgin olive oil1 tbsp red wine vinegarsalt & pepper to taste
Directions
Slice all ingredients and combine in bowl with oil and vinegar.
Chill for at least an hour. Serve.

    yummy! I made this with garden tomatoes, and garden basil instead of the peppers, and used organic unpasteurized cider vinegar, also a few drops of liquid stevia - very very delicious - 8/23/10
