Wild Rice Pilaf Chicken Sausage Casserole

Ingredients
I box Near East Wild Rice, cooked w/ 2tbs butter or olive oil4 links Al Fresco ( or other) Pre-cooked Garlic Chicken Sausage1 box frozen broccoli, cooked, chopped,1/2 can Cream of mushroom soup (reduced sodium)2 Shallots1 Red onion4 oz Light shredded Mozzerellai.5 cups chopped baby bella mushrooms1 yellow bell pepper
Directions
Makes 6 servings

preheat over to 350

Saute sausage, shallots, and onion together until onions are soft and sausgage browns slightly

add chopped bell pepper for about 2 mins

combine all ingredients (except cheese) in a large bowl

add spices if desired ( I use a little oregano and red pepper flakes)

Coat casserole pan with nonstick spray and fill with mixture

sprinkle with cheese and cover with tin foil

bake for about 20 mins

turn oven to broil to brown cheese for about 5 mins

let cool before serving

Makes great leftovers!
