Easy Eggplant dish

Ingredients
1 eggplant, diced1 yellow squash, diced1 cup chopped onions1 cup brown rice1 tlbsp. butter1/8 cup canned sliced green chiles1/2 cup crushed crackers1 cup shredded mozzarella cheese
Directions
Serves 6 Preheat oven to 350 degrees
I put my eggplant and squash in an electrice pressure cooker and cooked for 4 minutes. Drain and cool.
In a 2 quart casserole dish combine all ingredients except the crushed crackers and cheese. Sprinkle over the top. Bake 30 minutes
