Ingredients 1 cup whole oat groats2/3 cup filtered water 2 eggs 2 Tbs.unheated honey and/or raw agave 1 tsp.baking powder 1/2 tsp. sea salt 1 tsp.vanilla extract Your choice of fresh fruit -- raspberries, bananas, blueberries Coconut oil or other oil Directions Measure 1 cup whole oat groats and grind medium fine. Mix in 1 teaspoon baking powder, 1/2 teaspoon sea salt, then 2 egg yolks, 2/3 cup water and 2 tablespoons honey or raw agave. then:In separate bowl, whip 2 egg whites until you get peaks. Gently fold egg whites into batter briefly. Spoon batter into skillet heated with 1 tsp. coconut or other oil. Flip cakes when bubbles appear. Cook about 1 minute on second side and serve. NOTE: Adjust cooking time to make both sides golden brown. Syrup: Mix~ 2 tablespoons raw agave or honey with 1/4 cup water and 1 teaspoon vanilla extract. Warm briefly over low heat. Serves: 2Makes: 6 pancakesTop off with fresh fruit and eat up
