Vegetable pasta sauce

Ingredients
2 cloves garlicMedium red onionRed or yellow bell pepperBaby corn (or sweetcorn)Tinned tomatoesTomato pureeSaltPepperPaprikaMild chili powderMixed herbsOlive oil
Directions
Makes 2 generous servings (serve with spaghetti or other pasta).

1. Chop all the vegetables and crush the garlic
2. Gently heat the olive oil in a pan and add the garlic and onions, cook for a few minutes
3. Add the chopped peppers and corn and cook for a few minutes
4. Stir in the tomato puree, tinned tomatoes and add some water (fill the empty tomato can with water and pour in)
5. Add all the seasonings, herbs, spices
6. Stir, cover and cook for 20 minutes, stirring occasionally.
