Easy Lemon Buttermilk Cake

1 1/2 cup all purpose flour1/2 teaspoon salt1/2 teaspoon baking soda1 sticks (4 ounces) unsalted butter, at room temperature3/4 cup granulated sugar2 large eggs1/2 cup buttermilk1 teaspoons vanilla extractzest of one lemonjuice of one lemon1/4 cup granulated sugar
Preheat oven to 350 degrees.
Put room temperature butter and sugar in large bowl. Cream together with fork. Add eggs, vanilla, salt, soda, zest, and mix. Add flour and buttermilk alternately while mixing. Pour into a buttered and floured 8" x 8" pan. Bake for around 20 minutes or until slightly golden brown on edges. Let cool for 15 minutes. Mix together 1/4 c. sugar and lemon juice. Pour over warm cake.

Would this taste better if you used confectioner sugar and lemon juice for the top instead of regular sugar? - 10/20/10

The granulated sugar creates a slightly crunchy layer on top that adds a tiny bit of texture. I'm sure confectioner's sugar would taste the same but not create the layer on top.
