Lemon Caper White Fish

Ingredients
1 cube chicken stock1 cup water1/4 cup capers, drained and chopped1/4 cup lemon juice, fresh16 oz Mahi Mahi1 teaspoon cornstarch
Directions
Dissolve stock cube in water. Add capers, and lemon juice. Pour liquids into baking dish and place Mahi Mahi in dish. Cover with foil. Bake until fish is tender and flaky. Remove from baking dish to a plate. Pour all but 2 tablespoons of the liquids into a small sauce pan on medium heat. Take remaining 2 Tablespoons and mix in the cornstarch. Mix the slurry until smooth. Slowly pour 1/2 of the cornstarch mixture into the pan. Bring the sauce up to a boil and continue to add the cornstarch until it has reached desired consistency. Pour sauce onto fish.
