Mediterranean cauliflower au gratin

Ingredients
1 large head of cauliflower, chopped1 pint container of grape tomatoes, quartered1 cup chopped onion1/3 cup olive oil2 tbsp. garlic powder1 tsp. Italian herb seasoning2-3 tbsp. capers, drained3/4 cup feta cheese crumbles
Directions
Preheat oven to 375 degrees farenheit.

Combine oil, garlic powder, italian herb seasoning and capers. In a mixing bowl, toss vegetables in oil mixture until all vegetables are coated. Evenly distribute combined ingredients in a 9" x 12" baking dish. Top with feta cheese crumbles.

Bake covered in foil for 25-30 minutes, or until cauliflower is tender. Bake uncovered for 15 minutues, or until top is browned.
