Banana Nut Muffins

Ingredients
1 Cup Quaker Oats (not quick oats)2 Very Ripe bananas, mashed1 Cup Walnuts (chopped)1 Cup Skim Milk1 Cup Whole Wheat Flour1/2 Cup Brown Sugar1 tsp Vanilla Extract1 Egg1 tsp Baking Powder1/2 tsp Baking Soda1/2 tsp Salt1 tsp Cinnamon1 packet Equal/Sweet n Low
Directions
Soak the oats in the milk for one hour.
Preheat the oven to 400 degrees.
Spray muffin with non stick spray.
Combine the soaked oats, bananas, egg, and vanilla extract.
In another bowl combine the whole wheat flour, brown sugar, baking powder, baking soda, salt, cinnamon and the Equal/Sweet n Low.
Combine the dry and wet ingredients together and mix in the walnuts. Spoon into the prepared muffin pan. It fills the muffin cups on my muffin pan.
Bake for 20 minutes or until done.

Makes 12 servings/muffins.

*I let them cool and put them in individual zip lock bags and my family loves them for on the go.*

    Yummy! I did use 2 tsp of white sugar in place of the s/l. Also, added 2 tbsp of ground flax seed. Very tasty. I always seem to have banana's in the freezer, nice change from banana bread. - 1/25/11

    Very good! Nice clear directions. Moist and tasty. They rose quite a bit. I cut down on the nuts and used 1/2 c almonds.
    Soaking the oats is a good idea. The grandkids loved them. They were all gone in a few minutes. Less for me to be tempted by. Will definitely make again. - 2/5/12

    just made them and tasted the first one...yummy! but i think i might use half brown sugar and half regular sugar next time, for my taste they could use a little extra sweetness. i even used the quick oat kind because that's what i had, and i just soaked it for less time. still good. - 1/10/10

    Thanks for the great recipe! I used soy milk instead of milk and I only had 1/2 cup chopped walnuts so I added 1/2 cup raisins to it. It came out great. It's pretty filling too. Great for a snack. This recipe is to keep. - 12/15/09

    I just baked this recipe and it taste very good ..thanks for sharing. I used choped almonds instead of the walnuts and stil tasted good. I didn't have walnuts at hand.
