Whole Wheat Flour, 1.25 cupFlour, white, 2.25 cup Baking Soda, 2 tsp Nutmeg, ground, 1 tsp Cloves, ground, 1 tsp Cinnamon, ground, 1 tsp Canola Oil, .5 cup Applesauce, unsweetened, .5 cup Egg, fresh, 2 large Flaxseed, 2 tbsp Water, tap, 2 tbspBaking Powder, .25 tspSalt, 1 tsp (optional)Granulated Sugar, 1.5 cup Brown Sugar, 1.5 cup, packed Pumpkin, canned, without salt, 2 cup
Sift together flour, baking powder, soda, salt and spices. Add the sugars, mixing well. Mix dry ingredients with the oil and pumpkin, stirring until well combined. Add eggs, one at a time, blending thoroughly. Pour into 2 greased and floured 91/2 by 5 1/4 inch loaf pans. Bake at 350 degrees for 50 to 60 minutes or until tester comes out clean. Cool for 5 to 10 minutes then remove from pans. Place on wire racks to cool completely. Makes 2 loaves - 12 to 16 slices per loaf.
