I medium cooked, mashed butternut squash1/4 cup sugar free maple syrup2 Tbls. I Cant Believe Its Not Butter KightSalt and Pepper to taste
Slice 1/2 opening down side of squash. Place in microwave, turning as needed. Cook until tender. Open squash, remove seeds and outer skin. Mash with butter, syrup and salt and pepper to taste.
Makes 4 3/4 cup servings.
