Oatmeal Raisin Cookies

Ingredients
1 cup oatmeal 1/3 cup whole wheat flour 1/2 tsp baking soda 2 tsp cinnamon 1/3 cup unsweetened applesauce 1/4 cup sugar 1 egg white 1/2 tsp vanilla 1/4 cup raisins
Directions
Combine the Oatmeal, Whole Wheat Flour, Baking Soda, and Cinnamon. Whisk together Applesauce, Sugar, Egg, and Vanilla. Slowly add the dry ingredients into the wet. Stir in raisins.

Separate into 5 mounds on cookie sheet. Shape into cookies, about 1/4" thickness.

Bake at 365 degrees for 10 minutes. Let cool, then flip cookies upside down and bake for another 2 minutes.

(other fruits and nuts can be substituted for raisins.)
(chill dough for 15-30 minutes for less gooey dough)

    I thought maybe the blandness others mentioned was due to the lack of salt. I used a whole Eggland's Best egg, 1/4 brown sugar instead of white (for more richness), added a couple Tbsp of flour and a 1/2 tsp of salt, and they turned out great. So easy! - 7/19/09

    These are great for that quick breakfast alternative. Substitued 1/2 of the sugar for stevia and used organic steel cut oats for the oatmeal, a little chewy but nothing you can't handle. Also substitued dried cranberry's for 1/2 rasins. Well def make again, thank you! - 10/7/10

    I made these with Splenda, a tsp of pumpkin pie spice, a little extra applesauce and 1/4 tsp salt. Without raisins/nuts/sugar they're 100 cal each, and incredibly delicious. Next time how can I make them "lighter" or fluffier though? Butter? More baking soda? - 7/17/10

    I just baked these and I really like them. I was nervous about them because they looked a little strange before cooking, but they're great! I can see what people mean about them being a little bland, but I'm not sure what could be changed, I'll comment again if I find something.

    Yes 365 degrees is correct. And of course you can make them smaller, i would just lower the baking time and temperature. Just play around with the recipe & enjoy!

    I made this last night since my son had a craving for oatmeal cookies... right in the middle of the prep, I realized we had no eggs :-s So I had to skip that ingredient and they turned out good...     These turned out pretty well... I added a bit of nutmeg per other suggestions and also used 1/2 sugar and 1/2 Splenda and a mix of dried cranberries and raisins. Overall, they were pretty good - still a bit plain, but it might just be me still getting used to the taste of whole wheat flour - 6/23/10
