Acorn Squash, Mashed, Microwave

Ingredients
Acorn squash, approximately 4" diameterBrown sugar, 1 tbspLemon juice, 2 tspButter, 1 tbsp
Directions
Pierce skin of squash four times. Microwave whole squash 8-10 min until soft to touch. Cut in half, remove seeds. Season or fill with desired filling. Cook covered 5-6 minutes more.
Cut away and discard skin of squash. Mash the contents. Serves four.

    Pretty good. It would probably have been better if I'd used the brown sugar instead of Splenda, but I'm cooking for a diabetic. I did add cayenne pepper which gave it a nice zing. - 2/4/18

    This is so easy and so good. I leave the squash whole, cut it in four pieces and eat the skin as well. I read that it has all its vitamins right under the skin. I do make this very often. I want to give it five stars but for some reason the computer will not let me. - 1/7/18

    My Trader Joe's this week was doing something very similar, without lemon juice & with their own 21-seasoning. I made at home without seasoning or lemon juice, and it was terrific & easy. Will try with lemon juice next time! - 10/2/08
