Barbara's Fajita Flatbread Pizza

1 piece lavash, I used California Lavash whole grain type (found at Whole Foods)3 oz of cooked fajita meat of your choice, this recipe is for pork but I have also used chicken. Plain cooked meats may also be used.1 Italian tomato, cut into small pieces. try to remove excess moisture with a paper towel. A regular tomato may also be used.1/3 cup of fresh mushrooms, cut into small pieces1/8 cup (2 T) of colby jack cheese, shredded1/8 cup (2 T) of mozzerella cheese, part skim, shredded1/4 teaspoon of Italian seasoning
Makes 4 rectangles of pizza, 2 rectangles per serving
Preheat oven to 350 degrees.
Place whole piece of lavash on a non-stick baking sheet.
Top with the rest of the items making sure to spread each item equally on the crust. Leave about 1 inch on all sides. Place in center of the oven and bake for 7-10 minutes, until the cheese melts and the outside crust browns. The last few minutes could be under the broiler, if desired.
When done, remove from oven and cut into 4 rectangles using a pizza cutter.
