Low Carb Salmon Patties

1 (14.75 ounce) can salmon1 medium onion, chopped2/3 cup almond flour2 eggs, beaten1/4 cup chopped fresh parsley1 teaspoon dry mustard (or regular or dijon)3 tblsp extra virgin olive oil
1. Drain the salmon, reserving 3/4 cup of the liquid. flake the meat and remove the bones.
2. Put a tblsp of EVOO in pan and add onion, and cook until tender.
3. When onions are done, combine the onions 1/3 of the cracker crumbs, eggs, parsley, mustard and salmon. Mix until well blended, then shape into six patties. Coat patties in remaining almond flour.
4. Add remaining olive oil to pan and cook patties over medium heat until browned and turn.

This recipes has some obvious mistakes. Once you overlook the mistakes, it's a good recipe. . Changes I would make: discard the liquid, you don't need it. Regular olive oil is ok, no need to use EVOO. Keep the bones for the calcium. Ignore reference to cracker crumbs in the instructions. - 12/30/15
