Low Fat Banana Loaf

2 cups all purpose flour3/4 cup whole wheat flour1 cup unpacked brown sugar1-1/2 tsp baking powder1/2 tsp baking soda1 tsp cinnamon1/2 tsp salt3 egg whites2 tbsp melted butter3/4 cup no-fat plain yogurt1 tsp vanilla2 cups mashed ripe banana
Preheat oven to 325 degrees.
Combine flours and dry ingredients in a large bowl (first 7 ingredients in list).
In a medium bowl, beat egg whites, butter, yogurt, and vanilla. Add bananas and whisk until smooth.
Add wet ingredients to dry ingredients, stirring only until moistened.
Spray a 9x5 inch loaf pan with non-stick spray. Pour batter into pan.
Bake at 325 for 1 hour & 20 minutes (or 80 min). Remove and cool before serving.
Makes 16 servings (slices).
