Fabulous Salmon Patties

Ingredients
Pink Salmon, 2 6 oz cans, drained2 eggs, large1/4 to 1/2 onion, choppd finely1/2 c. fresh mushrooms, chopped finely1/2 c. old fashioned oats2 tbsp lemon juicepepper to tasteOlive oil, extra virgin 2 Tbsp.
Directions
Drain the liquids from your can of salmon. I use a mini food processor to chop my oats to a flour texture, then chop my onions and mushrooms. Mix all ingredients except the oil in a bowl. Heat the oil in a skillet over medium heat. I use a serving spoon to scoop the mixture into the pan, flattening each patty out, and fry for about 4 minutes on each side, until the patty is a nice brown color. I serve these with rice and a salad for a light supper.
