Oat Flour Blueberry Pancakes (low GI)

Ingredients
2/3 c oat flour1/4 c wheat germ, raw1/2 c lowfat cottage cheese1/2 c liquid egg substitute1/4 buttermilk, lowfat1 t cinnamon, ground1 t baking powder10 drops liquid stevia1/2 frozen blueberries (optional)
Directions
Mix all ingredients in a blender until smooth. Let sit for 5 mins to thicken while pre-heating 8-9" non-stick skillet on medium heat. Once hot, spray lightly with olive oil. Pour 1/3 batter, enough to almost cover bottom of pan. If desired, add approx 1/8 c frozen blueberries on top, spreading evenly. Let cook until edges are light brown, about 4 mins. Carefully flip and let cook until done, about additional 3 mins. Serve hot with a drizzle of agave nectar.
