1/2 c. Quinoa1/2 c. Water1/2 c. Veggie broth1/2 c. Corn kernals1/4 c. Mozzerella1/4 c. Flour2 Tbsp. Milk1/8 tsp. Hot pepper sauceSalt + pepper to tasteOil for cooking
Makes 8 pancakes
Boil water- add quinoa and veggie broth, reduce heat and simmer 15 minutes. Fluff with fork.
Combine all ingredients except oil in a medium bowl
Cook 1/4 c. of mixture at a time on an oiled griddle, until browned on the bottom (~3-4 min each side on medium heat)
