Beans & Rice

Ingredients
1 can Kidney beans1 can Cannellini beans1 can crushed tomatoes (fire roasted)4 cups chicken stock2 cups of short grain brown rice (uncooked)1 medium onion chopped1 bell pepper chopped1 tbls olive oilsalt and pepper to taste1 tsp of thyme1-2 tsp of cumin
Directions
put chicken stock and rice in a sauce pan and bring to a boil. reduce heat to a simmer untill rice is fully cooked. In a large pan heat olive oil and add onions cook untill soft. add bell pepper cook for about 5 minutes then add both cans of beans, spices, and crushed tomatoes. add rice when finished. Allow all ingredients to simmer together for about 15 minutes then serve.
