Slow Cooker Beef Stroganoff

Ingredients
2 lbs. Beef stew meat1 1/4 C beef stock or water1 lb. sliced baby portobello mushrooms1 small onion, chopped3 cloves garlic, minced or pressed3 T butter2 t gound mustard1/2 t ground thyme2 T dried parsley1 t honey1 1/2 C reduced fat sour cream
Directions
In a large skillet, brown meat. Add 1 C broth. Loosen browned bits from pan and transfer into slow cooker.

In the same skillet, saute mushrooms, onion and garlic in butter until tender. Add 1/4 C broth, dry mustard, honey, parsley and thyme. Add to slow cooker. Stir to combine.

Cover and cook on low 6-8 hours or until meat is tender. Stir in sour cream. Serve over whole wheat egg noodles or brown rice.
