Pork Stir Fry

Ingredients
Garlic, 4 cloves, mincedBrown rice, H-E-B 100% whole grain-uncooked, 1 cupPortabella Mushrooms, 125 grams*Pork Chops (pork loin), roasted, 8 oz, cooked and chopped into bite-sized cubesOlive Oil, 2 tbsp,Egg, fresh, 2 mediumSoy Sauce, La Choy, 3 tbspBroccoli, Carrots & Water Chestnuts, frozen-H-E-B 5 cupsOyster Flavored Sauce-Panda Brand, 3 tbsp1/4 cup water
Directions
1)Cook 1 cup rice in rice cooker.

2)Spray wok with olive oil and saute mince garlic.

3)Add 1 T olive oil and heat. Once wok is hot add rice to wok and stir fry for 1-2 minutes.

4)Add frozen vegetables and 1/4 cup water. Place lid over wok to steam for 4-5 mintues. Stir as needed to prevent burning.

5)Once frozen vegetables are nearly cooked, add other tablespoon of olive oil and once heated add portabello mushroom and cooked pork. Continue stir fry.

6)Push mixture to side and add eggs and scramble.

7)Mix eggs wth rest of mixture.

8)Add soy sauce and Oyster sauce and mix.

Makes 6 servings.
